Debra Van Cleave shares a heartwarming her father’s recipe that never fails to evoke feelings of warmth and coziness. Pops G’s Hamburger Soup is a delightful blend of savory flavors and wholesome ingredients, making it a perfect comfort dish.
Ingredients:
- 1 lb hamburger
- 5 large carrots, sliced
- 1 small onion, chopped
- 2 stalks celery, thinly sliced
- 1 can of green beans
- 1 can peas
- 1 can sweet corn
- 1 can Lima beans
- 1 can stewed or diced tomatoes
- 1 small can of tomato paste
- 1 to 2 potatoes
- ½ head of cabbage or 1 lb fresh spinach (or both)
- 8 cups beef broth
- Salt, pepper, garlic powder
- 1 packet Sazon Goya Culantro y Achoite
Instructions:
- Sauté onions, celery, and fresh garlic in a pan. Add hamburger (season with salt, pepper, and garlic powder) – drain grease when done.
- Add the sautéed ingredients to a crockpot along with 8 cups of beef broth, seasonings, all veggies (drained), tomato paste, stewed or diced tomatoes, and peeled potatoes cut into small cubes. Add shredded cabbage and/or de-stemmed spinach. Include the cooked onions, celery, fresh garlic, and hamburger.
- Cook on high for 2-3 hours, then turn to low and cook until potatoes and celery are tender.
